I usually make this with cream of mushroom soup and salsa, but I'm trying to cut down on my spice and tomato intake (acid reflux.)Hence, this recipe came about. It is pretty basic, mild, and filling.

Ingredients

small slow cooker. This recipe works well with a 2-qt slow cooker.
2 chicken breasts, boneless & skinless
up to 1 can cream of mushroom soup, reduced sodium
1 can great northern beans
3 -4 tbsp. tomato sauce (to taste)
3-4 tbsp. taco seasoning (to taste. the dish is not really spicy)
4 tbsp. dried basil
3 tbsp. oregano
3 tbsp. rosemary
3 tbsp. herbs de provence
Tips
- I like to use a little less than a can of mushroom soup to minimize salt
- I often substitute chilli powder, cumin powder, garlic powder, and onion powder for the store-bought taco seasoning.
Directions
- mix mushroom soup, beans, & herbs in the crock pot
- add taco seasoning and tomato sauce to taste
- add chicken and stir
- set crock pot on high and cook for 4 hours
- shred the (now cooked) chicken with a fork and add cilantro. mix
- cook for another 10 to 30 minutes
Serve with rice, or bread

- shred the (now cooked) chicken with a fork and add cilantro. mix
- cook for another 10 to 30 minutes
