Introduction

This recipe needs a BIG pot. This recipe needs a BIG pot.
Number of Servings: 18

Ingredients

    In a big skillet saute
    2lb. ground turkey or lean ground beef (90% fat free) until browned & crumbled
    2 big onions chopped & sauteed until they become translucent
    1 big green bell pepper chopped & sauteed
    * I usually saute the meat first and then add the vegetables

    Transfer ingredients to the big pot.
    Add:
    1 can Rotel Tomatoes- the original
    3 cans tomato sauce
    2 cans beans with liquid-pinto or kidney or whatever
    2 cans beef broth
    1 can corn with liquid
    1 package Taco mix
    1 tablespoon vinegar to relieve pressure in beans



Tips

You can garnish with corn chips, avocado, raisins, pecans, cilantro, chopped onion, cheese, or not.


Directions

Simmer for 1/2 to 1 hour.
