    2 large red tomatoes, diced
    1/2 c. diced bell pepper
    6 green onions, sliced
    1 c. shredded cabbage
    1 c. grated carrots
    1 small head cauliflower (About 1 1/2 c. chopped)
    1 c. diced celery
    1 c. peeled and diced cucumber
    1 c. fresh mushrooms, sliced
    1 c. sliced radishes
    1 c. fresh chopped spinach
    1 1/2 c. diced zucchini or summer squash
    2 Tsp. chopped cilantro
    1 fresh lemon


You can use different colored peppers, cabbage and squash to make a more variety type salad.


Prepare all vegetables and place in a large bowl. Mix well. Squeeze the juice of 1 lemon over and mix. Let stand in refrigerator over night to allow flavors to blend. Serve and Enjoy!
