Ingredients

    Dressing ingredients:

    1/2 tsp. grated Orange Peel
    1/2 cup Orange Juice
    1/2 cup Canola Oil
    2 Tbsp. jalapeno jelly
    3 Tbsp. Red Wine Vinegar, 3 tbsp
    1 Tbsp. Lemon juice
    1/4 tsp. Salt
    4 Jalapeno Slices, pickled

    Salad ingredients:
    15 oz. can pinto beans (S&W 50% less sodium)
    *15.25 oz. can Red Kidney Beans
    15 oz. can whole kernel corn, no salt added
    1 cup cooked brown rice
    2 stalks Celery, chopped
    1 carrot, diced
    1 cup Onions, chopped
    1/2 cup Zucchini, diced
    1/2 cup Green Peppers (bell peppers) chopped
    1/2 Tomato (2-3/5" dia)

Directions

Blend together eight dressing ingredients. Set aside. Mix together all the salad ingredients. Add dressing to salad. Refrigerate to allow flavors to blend.

Serving Size: makes about 9 1-cup servings
