Ingredients

    1 pound Zucchini - grated
    1t coarse or kosher salt
    Walla Walla Sweet Onion - diced
    1 lg. egg - lightly beaten
    freshly ground black pepper
    1/2 c whole wheat flour
    1/t t baking powder

Tips

Do ahead: These fritters keep well, either chilled in the fridge for the better part of a week and or frozen in a well-sealed package for months. When you are ready to use them, simply spread them out on a cookie tray in a 325 degree oven until they're hot and crispy again


Directions

1. In large bowl, Stir salt into grated zucchini...let stand 10 minutes. 2. Wring out the zucchini by wrapping it up in a piece of cheese cloth and wring away!
3. Return zucchini to the bowl and add the lightly beaten egg, diced onions, and the pepper.
4. In small bowl, mix the baking powder with the flour.
5. Stir flour mixture into the zucchini batter.
6. In cast iron skillet, heat small amount of olive oil then drop a few spoonfuls of the zucchini batter in.
7. Fry 3-4 minutes per side until golden brown.
8. Some serve this with sour cream or greek yogurt. Or topped with a fried or poached egg.

Serving Size: makes 6 3 inch patties
