Ingredients

Frozen tortellini (make sure the package says it cooks in 5 minutes)
jar Alfredo sauce, I used Ragu Classic Alfredo Sauce
1 package mushrooms
1 frozen 10 oz package of spinach
1 tomato (medium to large)
oil of choice - coconut oil, olive oil
water
salt, to taste
Directions
Start the water so it'll boil in a pot. As it works, put oil in a skillet and start to sautee mushrooms. After about 2-3 minutes, add diced tomato.
In a bowl, start defrosting spinach in microwave.
When the water is boiling, add the tortellini - cooks in 5 minutes! Continue sauteing the mushroom-tomato mix, but add the spinach.
Drain the tortellini and add drained tortellini to the skillet (that's off now). Add Alfredo sauce and stir until evenly coated.
Serving Size: Makes 8 servings
