Directions
-Whisk eggs, milk, salt & pepper. Set aside.
-Using an oven-proof skillet, saute leeks, peppers, and mushrooms in olive oil until just tender. Stir in spinach and butter. Add egg mixture, tarragon, and cheese.
-Cook in a 325 degree (F) oven until egg is just set. Let stand for 5 minutes, then slice and serve
