Ingredients



    Egg, fresh, 3 extra large
    egg white, fresh, 3 large
    Milk, 2%, .25 cup
    Butter, unsalted, .5 tbsp
    Olive Oil, 1 1tsp
    Leeks, .5 leek
    *Peppers, sweet, red, fresh, .25 large (2-1/4 per lb, approx 3-3/4"
    Mushrooms, fresh, .5 cup, pieces or slices
    Spinach, fresh, .75 package (10 oz)
    Swiss Cheese, 1 cup, shredded
    Fresh tarragon
    Salt & pepper to taste

Directions

-Whisk eggs, milk, salt & pepper. Set aside.
-Using an oven-proof skillet, saute leeks, peppers, and mushrooms in olive oil until just tender. Stir in spinach and butter. Add egg mixture, tarragon, and cheese.
-Cook in a 325 degree (F) oven until egg is just set. Let stand for 5 minutes, then slice and serve
