Ingredients

1 package of whole wheat elbow pasta
1 cup non fat milk
1 large egg
1 stick of light butter - melted
2 cups of shredded mozzarella (part skim)
2 cups of shredded co-jack
Cajun seasoning
Tips
I like to cover the mac n cheese for the first 20 minutes so that it doesn't get crunchy on top.
Directions
Preheat oven 350
Cook pasta according to package directions. Drain.
Combine melted butter, milk and egg. Spray a 13x9 baking dish with nonstick cooking spray. Layer 1/2 of the noodles in the pan. Top with 1/2 butter/milk/egg mixture. Season with cajun seasoning and top with mozzarella cheese. Repeat with remaining noodles, egg mixture, seasoning and co-jack.
Bake covered 20 minutes. Remove cover and bake an additional 10 minutes. Serve warm.
