Ingredients

    1 c. dry quinoa
    1 whole zucchini, sliced/cubed
    1 red bell pepper, diced
    1 can red kidney beans, drained
    2 limes, juiced
    4-5 T of fresh, chopped cilantro
    3 T olive oil
    dash of pepper to taste

Tips

If you don't have lime/lemon juice, balsamic dressing is a good substitute, just taste it as you add.


Directions

Rinse quinoa in strainer, then cook with 2 c. water. When boiling, turn heat to med/low and simmer for about 12 minutes covered. Fluff and let cool. Add all other ingredients and toss. Chill or serve right away. There are many possible add ins/substitutions with this recipe, and many foods taste great and create a great healthy meal/side dish.
