Introduction

Ingredients

    Colorful peppers, I use one red, one green and one yellow. Cousous, onions, tomatoes, (can add other veggies like mushrooms), reduced fat sharp cheddar cheese

Tips

Can use different couscous flavors and different vegetables. You can also add a tiny bit of cheese to the top at the end of baking to look pretty.

While preparing the mix, I bake the peppers to soften them. Once I stuff the mix into the peppers, I bake on 350 for another 30 minutes.
