Ingredients
-
1 lb lean ground beef
1 lb ground turkey
1 1/2 c quick oats (certified GF oats are available)
1 c onion, diced
2 c spinach, chopped finely
1 c mushrooms, diced
1 T Worchestershire sauce
1 packet Swansons flavor boost, beef
2 lg eggs
1 T ground black pepper
Tips
I love this on its own, especially cold the next day, but I will also serve it with mushroom gravy. You could also do a tomato/ketchup topping.
Directions
Preheat oven to 375
Place oats in a blender and process until powdery. (I like the texture better when the oats are processed, but you could skip this step if you like whole oats)
In a skillet, over medium heat, saute onions until they start to look translucent, then add mushrooms, saute a couple minutes more, then add spinach, and saute for another minute.
In a large bowl, mix together beef and turkey until it is very well mixed. Mix in the rest of the ingredients.
Divide mixture between two loaf pans, and bake in a 375 oven for an hour.
When done, let sit for 10-15 minutes before cutting into slices. I slice each loaf into 8 slices. 1 serving is 2 slices.
Serving Size: makes 8 servings of 2 slices per serving
Number of Servings: 8
