    4 eggs, slightly beaten
    1-1/2 c chopped onion
    1 clove garlic (minced)
    1 t. salt, dash pepper
    1/2 t. oregano
    1/2 c. parmesan cheese
    2 tsp. chopped parsley
    1 c. Bisquick
    4 c. shredded zucchini
    1/2 c. oil ( I use 1/4 c. canola oil)


recipe calls for 1/2 cup oil, however I think that is to much and have reduced it to 1/4 cup when I make it.


mix all ingredients. Pour into 13" x 9" greased pan. Bake at 350 degrees for 30 minutes or until well browned.

Note: this "pie" formes its own crust!

Serving Size: makes one 13x9" casserole
