Ingredients

    1 lrg. Eggplant,washed, sliced 1 in. thick
    1 egg, beaten with 2T water
    1/2 C. Italian bread crumbs
    Sauce:
    2 chicken breast, ground (about a pound)
    1/2 C. onion, chopped
    1 C. zuchini. chopped
    1/4 C. bell pepper, diced
    1-24 oz. can Hunts Pasta Sauce (any flavor)
    Salt, pepper,garlic powder, bazil & oregano to taste
    2 oz. provolone cheese, grated
    4 C. cooked whole wheat pasta

    Pre heat oven to 450

Directions

Place cut eggplant on paper toweling, sprinkle top lightly with salt, cover and allow to set about 30 minutes.
Meanwhile brown chicken, onions, zuchine and bell peppers in a preheated skillet thats been sprayed with cooking spray. when chicken is no longer pink drain and add spices then pasta sauce, allow to simmer about 15 minutes.
Dip eggplant into egg wash then into bread crumbs, place on well sprayed baking sheet, one with an edge of 1 inch, place into pre heated oven (450) for 20 minutes, turning after 10. Spoon about 1/4 c. sauce over each eggplant round and place grated cheese over all. Return to oven until cheese melts, about 5 minutes.
Toss cooked pasta with the rest of sauce. Serveing is 2 eggplant rounds, 1 cup pasta and about 1/2 cup sauce. serves 4
