Ingredients

    1- boneless, skinless chicken breast, cooked and chopped
    1/2 cup onion, chopped
    1/2 cup red, green or yellow pepper, chopped
    1/4 cup celery chopped
    1- large potato peeled & cubed
    2- tablespoons Canola oil
    TOPPINGS
    2% Kraft shredded Mexican Blend Cheese
    Wholly Guacamole
    Light Sour Cream
    Salsa (We like El Pato)
    OPTIONAL
    Warmed flour tortillas or large lettuce leaves

Tips

I pre-cook chicken in a baggie in boiling water till done, to have on hand for quick meals. You can add any seasoning you like to the chicken in the bag, or leave plain.

I take out a bit of the leftovers, and add them to my scrambled egg for breakfast.


Directions

Warm skillet with Canola oil till hot. Add potatoes and onions, cook, stirring often, till semi-tender and lightly browned. Add celery and pepper and stir till tender. Add cubed chicken and cook till warmed through. Serve sour cream, cheese, salsa, and guacamole on the side.
