Ingredients

1 15 oz can black beans, drained and rinsed
1 15 oz can corn 'n peppers, drained and rinsed
3 green onions, thinly sliced
1 small red onion, chopped
2 medium tomatoes, seeded and chopped finely
1/2 cup celentro, chopped finely
1 packet Good Season's Italian Dressing Mix
juice of 1 lime
1/4 cup canola oil
1/4 cup white vinegar
1 jalapino pepper, chopped finely
2 avocados, chopped finely before serving
Tips
Serve with tortilla scoops for a snack or on a whole wheat tortilla for lunch.
Directions
Put beans, corn, onions, tomatoes and celentro in a large bowl.
In a small bowl whisk Italian dressing, lime juice, oil, vinegar and jalapino together. Add to large bowl of vegetables and mix thoroughly.
Chill for an hour or overnight. Before serving add avocados and mix gently.
