Ingredients

3 cups tomatoes (any type)
1 medium yellow or white onion
1 jalapeno
1 lime
1 handful of cilantro (chopped)
1 garlic clove (chopped) Or 1/8 teaspoon of garlic powder maybe substituted
½ ripe avocado (firm, not squishy)
Directions
1. Chop the tomatoes on a cutting board. Discard the loose seeds and juice if there is a lot of it.
2. Remove the paper covering from the onion and chop.
3. Slice the jalapeno into quarters long ways. Remove the seeds and white ribs. Chop into small pieces.
4. Remove the paper covering from the garlic and chop into small bits.
5. With a sharp knife, cut into the avocado length wise. There is hard pit in the middle of it that cannot be cut, so just work the knife around it. Pull the two halves apart and scoop out the avocado with a spoon. If it breaks don’t worry, it will then be cut the avocado up into ½ chunks.
6. Mix the tomatoes, onion, jalapenos, and garlic together in a bowl.
7. Roll the lime with the palms of your hand on the counter in a few circles. Cut the lime in half and squeeze the juice out over the mixture.
8. Add the avocado and mix just until mixed. Cover and refrigerate until ready to serve.
