Ingredients

    6 sweet potatoes, peeled and cut into bite-sized chunks
    1 medium red bell pepper, diced
    3-4 green onions, chopped, include green parts
    1/4 c red wine or cider vinegar
    1 T olive oil
    1 tsp ground cumin
    1 tsp sweet Hungarian paprika

Tips

This gets better after a day when the flavors have a chance to develop.


Directions

boil the chopped sweet potatoes until fork-tender -- about 10 minutes (don't let them get mushy). Drain and immediately run cold water over them to stop them cooking. Drain again, and set them aside to cool. Add peppers and onions. Whisk together vinegar, oil, cumin and paprika to make a dressing. Pour over potatoes and gently stir to cover all. Refrigerate.
