Ingredients

2 cans tuna, canned in water
Chickpeas, one can
Celery, 1 cup diced
Banana Peppers (optional), 1/4 cup
Olive Oil, 3-4 TBS
Juice of 1 lime (two if they're small.)
Salt and Pepper (to taste)
Tips
This is a very versatile recipe! Sometimes I add red pepper flakes, or spinach, or red or green peppers to the mix!
Directions
Dice celery and banana peppers.
Rinse Chickpeas. Drain tuna. Add all of the above to a medium sized bowl and mix gently. Add lime juice and salt and pepper. Your tuna salad is ready to serve now, but I think it tastes better after an hour in the fridge to let the flavors meld.
Serving Size: Makes four to five sandwiches
