Introduction
Simple Veggie Chili with Tempeh Simple Veggie Chili with TempehNumber of Servings: 6
Ingredients

1package TJ's 3 Grain Tempeh (8 oz)
1can pinto beans (15.5 oz)
1/2 onion, chopped
2 stalks celery, chopped
1 cup broccoli, chopped
1 small can tomato paste, or fresh tomatoes
1 T thyme
1 T crushed red pepper
1 t black pepper
other seasoning to taste
Tips
If you have fresh tomatoes, substitute them for the tomato paste. Also, change around the veggies per your liking.
Directions
1. Chop the tempeh, onions, celery, and broccoli.
2. Sautee in a large skillet over medium heat.
3. Add the pinto beans.
4. Mix the tomato paste and water in a bowl the consistency is fairly thin. You may need to use less or more water to get the consistency you want.
5. Add the tomato mixture to the skillet and heat thoroughly.
6. Add the spices to taste. You may also want to add black pepper.
