Ingredients

85g (3oz) dry lentils
1/4 cup diced onion
1 clove diced garlic
1/4 cup chopped cilantro
salt, pepper, paprika, cayenne, cumin to taste
1/2 tsp baking powder
Directions
Soak lentils in about 1 cup water about an hour.
Dice onion, garlic, and pepper. Chop cilantro.
Drain lentils.
Add lentils, onion, garlic, and pepper to foot processor, and "process" 20-30 seconds. Add cilantro and process another 10 seconds. Scrape down sides and season, about 1/2 tsp salt and a dash each of other seasonings/spices. Add ~1/2 tsp baking powder and process another 20 seconds or until the mixture is grainy.
Move mixture to a bowl and blend with a spatula. Scoop using a 1 tsp spoon onto a parchment paper lined baking sheet, making each scoop a ball about 3/4" in diameter. You will get nearly 2 dozen balls.
Freeze at least one hour or refrigerate 3-4 hours to allow balls to firm up and stabilize.
Either bake at 375F (spray with non-stick cooking spray if desired or spritz with olive oil) for about 15-20 minutes, pan fry, or deep fry. Oil not included in calorie/recipe calculation.
