Introduction
This is a variation on a classic Cuban dish that is designed to give you the most "bang" for your buck with protein. It is traditionally made with ground beef and white rice instead of ground turkey and quinoa, but I enjoy the lower fat protein punch the turkey and quinoa give me for the extra energy. Ingredients

1 lb - Ground turkey, extra lean
1/2 cup - Raisins (packed)
10 large Green Olives (Pimiento Stuffed ), sliced
3/4 cup Olive juice from olives above
1/4 cup - balsamic vinegar
2 cup - Raw Onions, chopped
1/4 cup - Garlic, minced
2 tbsp - Extra Virgin Olive Oil,
1 1/2 cup - Whole Grain Quinoa (Dry measure)
1/2 cup - Parmesan Cheese, grated
1/2 tsp Greek seasoning salt
Salt and Pepper to taste
Tips
If you are not a fan of quinoa, this meat mixture goes great over rice, stuffed in a gluten-free tortilla, or quite nicely on grits.
Directions
In a fine mesh strainer rinse quinoa thoroughly. Follow the cooking directions on the package to prepare for 6 servings and set aside.
In a large sauté pan over medium heat place 1 tbsp olive oil and rough chopped onion. Sauté until translucent. Add the chopped garlic and sauté 2 more minutes. Remove onions and garlic to a side dish and return sauté pan to heat. Add 1 tsp of olive oil and place ground turkey in the pan. Break up into a fine mince and saute until the meat is almost browned through.
Lower the heat to medium low. Add the sliced olives, olive juice, and rice vinegar with the juice to the pan and stir to incorporate. Saute covered for about 3 minutes. Add raisins and return onions and garlic to the pan. Stir and cover for about 3 more minutes. Add Greek Seasoning to taste. Simmer on medium-low-to-low for about 10 minutes to meld flavors stirring occasionally. Sprinkle with parmesan cheese and serve over 1/2 c. cooked quinoa, making sure each serving gets adequate liquid flavor potion from the pan.
