Ingredients

    1 c. lentils rinsed and sorted
    3 medium carrots, chopped
    1 medium onion chopped
    4-5 cloves of garlic minced
    3 tsp minced ginger root
    2 c. organic chicken broth
    6 c. water
    salt and pepper to taste, about a pinch of each works well

Directions

Rinse and sort the lentils, set aside. Heat up a large dutch oven with the olive oil. Add the chopped carrots, then the onion, ginger, and last the garlic. Cook until soft and caramelized. Add the curry powder and some salt and pepper to taste. Cook until the spices are toasted and coated with oil. Add the chicken broth and bring to a boil. Add the lentils and the water and cook for 30 minutes or until the lentils are soft.

Serving Size: Makes 8 big bowls of soup
