Ingredients

1/3 of a large head of cauliflower
2 tbsp + 2tsp virgin coconut oil
1 small onion, diced
1 medium carrot, diced
1 red bell pepper, diced
1 small zucchini, diced
6oz. mushrooms, sliced
2 cloves garlic, minced
2 tsp ginger root, minced
dash cayenne pepper
2 tsp sesame oil, divided
2 tbsp coconut aminos
4+2 scallions, whites and greens sliced
2 eggs
1/2 cup frozen peas
Directions
1) pulse cauliflower in food processor until it reaches rice size texture. Place in a covered dish and microwave 3 minutes on high heat
2) heat 2 tbsp coconut oil in a large pan over med high heat. Add onions and carrot and sautee until tender
3) add peppers, zucchini, mushrooms, garlic, ginger and cayenne, continue to cook until veggies are tender
4) meanwhile scramble eggs with 2 sliced scallions, and 1 tsp sesame oil. Cook in a separate pan with 2 tsp coconut oil over med heat
5) when veggies from step 3 are tender, add the steamed cauliflower, remaining sliced scallions, frozen peas, coconut aminos, and scrambled eggs to pan stir until combined, and adjust seasoning as desired.
