Ingredients

1 Cup whole wheat flour
1/2 cup rolled oats
1/2 cup oat bran
1 1/2 cup ready to eat wheat bran flakes
2 1/2 tsp baking powder
1/2 tsp grated nutmeg
1/2 cup chopped dried apricots
1 T grated orange rind
1 cup low fat buttermilk
3 egg whites
1/4 cup honey
1 T canola oil
Directions
In a large bowl, mix the oat flakes, flour, oats, oat bran, baking powder, and nutmeg. Stir in the apricots and orange rind.
In a medium bowl, blend the buttermilk, egg whites, honey and oil.
Pour the liquid ingredients over the flour mixture. Stir to combine, but don't overmix.
Line 12 muffin cups with cupcake papers. Divide the batter among them, filling each cup almost to the top. Bake at 375F degrees for 18 to 20 minutes or until the muffins are lightly browned.
Serving Size: 12 muffins
