Introduction

A bit heavier that a regular muffin but low in fat! A bit heavier that a regular muffin but low in fat!
Number of Servings: 12

Ingredients

    3/4 cup white flour
    3/4 cup whole wheat flour
    2/3 cup sugar (can use less)
    1/3 cup Splenda
    1/2 tsp salt
    2 tsp baking powder
    1/3-2/3 cup applesauce
    1/4 cup Egg Beaters
    1/3 cup 1% milk (or skim)
    2 pints blueberries (can use 1 pint)

Directions

Preheat oven to 400 degrees.
Spray muffin tin with Pam or line with muffin liners.
Combine flour, sugar, Splenda, salt and baking powder.
Add egg, milk and applesauce, mix well.
Add blueberries and gently fold in.
Spoon into muffin tins and bake for 20-25 mins.
Check for doneness with a toothpick that comes out clean.

    Very Good
    While small and not that fluffy, they were pretty good. I used an egg because I didn't have egg beaters at the time and I also used all Splenda, no sugar. A nice quick breakfast to go. - 8/7/15
