Ingredients

    Salad:
    1 head or 3 heart of Romaine Lettuce
    1/3 red onion sliced
    2 tomatoes quartered
    1 cup Greek olives, quartered
    2 medium cucumbers, partially pealed, sliced and halved
    1 cup crumbled Feta cheese
    6 or 8 oz jar artichoke hearts
    Dressing:
    1/4 cup White wine vinegar
    1/4 cup olive oil
    1/3 tsp oregano flakes
    1/4 tsp salt
    dash of pepper
    Chicken Marinade:
    1/2 cup zesty Italian dressing
    1/4 cup Soy Sauce
    a little red pepper flakes
    3 large boneless, skinless chicken breast

Directions

Marinate chicken 4 to 24 hours in advance. Grill - brush with remaining marinade. When cool, cut into bite size pieces
