Introduction

This is a full flavor hummus with garlic and roasted eggplant and onion. It makes a great dip for pita chips or vegetables, sandwich spread, or salad topping. Ingredients

    1/2 Cup Chopped onion
    1 Cup Cubed Eggplant
    1 oz sesame seeds

    1 Cup Chick Peas (cooked)
    1 tsp Garlic Powder
    2 Tbsp Lemon Juice


Directions

Place onion and eggplant on baking sheet. Roast in oven at 400* for 10-15 minutes, until vegetables are soft. In last 3-4 minutes, add sesame seeds to roast.

In blender or food processor, combine chickpeas, lemon juice, garlic powder, sesame seeds and roasted vegetables. Blend until combined.

Serving Size: Makes 4 1/2 Cup servings.
