Ingredients

    2 boneless, skinless chicken breasts, boiled and cut into bite size pieces
    1/4 cup chopped red pepper
    1/4 cup chopped yellow pepper
    1/4 cup chopped onion
    1 can cream of chicken soup
    1 can Ro tel tomatoes and green chilies
    1 cup 2% cheddar cheese
    cooking spray


Directions

Boil chicken breasts until done - set aside to cool.
While chicken is boiling, chop peppers and onion.
Saute peppers and onion in skillet that has been lightly coated with cooking spray.
Chop chicken into bite size pieces.
Mix together chicken, peppers, onions and soup.
Spray a 9 inch pan with cooking spary. Spoon half of chicken mixture into pan. Sprinkle with half of cheese. Place remaining chicken mixture on top of cheese. Sprinkle remaining cheese on top. Bake in 350 degree oven for 45 minutes. Serve with brown rice.
