Introduction

This is one of my family's favorite meals. It is a one-pot meal and is very versitile: use whatever veggies need using up. I can whip this up in a jiffy. This is one of my family's favorite meals. Number of Servings: 6

Ingredients

    16 oz. of pasta (I use rotini or ziti rice pasta)
    1 c. marinated artichoke heart, cut up
    1/4 c. kalamata olives, cut up
    1/2 c. sun dried tomatoes packed in olive oil
    1 c. fresh broccoli, chopped
    1/4 c. olive oil
    salt/pepper
    herbs(I use basil and oregano)

Tips

Be creative with vegetables. I sometimes add fresh tomatoes, zucchini, yellow squash, steamed cauliflower, etc. It is easy to get a couple servings of vegetables in this dish. Carnivores may add chicken and/or feta cheese.


Directions

Cook pasta in water until done. Throw the broccoli in water with the pasta the last 5 minutes to soften it. Drain pasta and put it in a skillet. Add olive oil and toss to coat. Add other ingredients and season with salt, pepper and herbs to taste. Heat through in skillet.
