Number of Servings: 8

Ingredients

    1 lb. boneless, skinless chicken breasts
    1/2 cup white rice
    1 can (15 oz.) black beans
    1 can (14.5 oz) diced tomatoes (I use garlic and onion flavored tomatoes)
    1 can (10.5 oz.) Campbell's Healthy Request Cream of Mushroom soup
    1 jar salsa (16 oz.)
    1/2 cup diced raw onion (use more to taste)
    1/2 packet of Taco Seasoning

Tips

To decrease sodium try: low sodium taco seasoning, Campbell's soup and diced tomatoes.
You can either do 5 large 1.5-cup servings or 8 1-cup servings.


Directions

Combine uncooked rice, black beans, diced tomatoes, mushroom soup, salsa, taco seasoning and diced onions in a large bowl. Place chicken in slow cooker and cover with mixture. Cook 6-8 hours on low. Chicken is cooked when you can take two forks and shred it. I shred the chicken and then mix everything thoroughly before serving. Chicken can also be served whole on top of the beans/salsa/soup/rice mixture.
