    Mori-Nu, Tofu, silken, soft, 1 block
    Tofu, firm, 1 block
    Olive Oil, 1/4 C
    Garlic, chopped, 1Tbsp
    Nutritional Yeast flakes, 2 Tbspn
    Pepper, black, 1 tsp
    Lemon juice, 0.25 cup
    2 Tbsp Herbs (i.e., basil parsley, oregano, etc) (optional)
    1/4 C Lemon Juice


Cut Tofu in half. Wrap in dish towel. Place on plate, then place a 2nd plate on top with something to place weight on it. This gets the excess water out of the tofu. Wait for 30 minutes.
After the above is complete, puree all ingredients in a food processor with the "S" blade, but not too well -- Ricotta has a little bit of texture, it's not completely smooth. You can also make it a bowl with a potato masher.
Taste and adjust seasonings to your own personal tastes.
