Ingredients

    Carrots, 1/2 cup, chopped
    Celery, 1/2 cup, diced
    Onions, 3/4 cup, chopped
    Garlic, 2 cloves
    Cabbage,1 med head, chopped
    Broccoli, 1 bunch, chopped
    Chicken Broth 99% Fat Free, 3 cups
    Tomato Paste, 1/4 cup
    Crushed Tomatoes, 28 oz. can
    Basil,1/2 tsp
    Oregano, ground, 1/4 tsp
    Zucchini, 1 cup, sliced

Directions

Using a spray oil, saute carrots, celery, onion, and garlic. Cover the pot and leave on LOW for 15-20 min. Add cabbage, broccoli, broth, basil and oregano, crushed tomatoes, and tomato paste. Cover and let simmer 1 hour, stirring occasionally. Lastly, add zucchini and let simmer 15 min longer.
