Number of Servings: 24

Ingredients

    2 cups whole wheat flour
    1 cup quick oats
    4 tsp. baking powder
    1.2 tsp. salt
    1 tsp. pumpkin pie spice
    4 large eggs
    1 cup packed brown sugar
    1/2 cup canola oil
    1/2 cup water
    16 oz. solid-pack pumpkin

Tips

I substitute applesauce for half the oil, they're still yummy. They're also wonderful with a dusting of powdered sugar on top.


Directions

Preheat oven to 350. Place paper liners in muffin tins. Mix dry ingredients in medium bowl, set aside. Beat eggs sugar, and oil until light and fluffy. Add water and pumpkin, mix well. Stir in dry ingredients. Fill muffin tins 2/3 full. Bake about 15 minutes or until a toothpick comes out clean.
