Ingredients

    2 boneless skinless chicken breasts
    2 TBSP Taco seasoning
    1 tsp steak seasoning
    juice of one lemon
    1 can chicken broth
    1 can Old El Paso Enchilada sauce
    1/2 onion - sliced thin
    40 Tortilla Chips
    1 TBSP Olive Oil
    1 tsp I Can't Believe it's Not Butter
    2 cups cheddar-monterey jack cheese blend

Tips

Serve with beans and a few more tortilla chips. Enjoy!


Directions

marinate the chicken in the lemon juice and seasonings for 20 to 30 minutes. Place oil in skillet and sear meat on both sides; add onions and broth and simmer for 15 minutes, cutting chicken up so it will cook through. Butter a 9 x 9 baking dish; or spray with cooking spray. Break tortilla chips coarsley in bottom of dish, put drained chicken w/onions over chips. Pour Enchilada sauce evenly over all, cover with shredded cheddar-jack cheese blend and bake 10 - 15 minutes in 350 degree oven until cheese is melted and it is hot throughout.
