Ingredients

    1 lb. ground beef
    1 med.-large onion, chopped
    2 sweet potatoes, peeled & chopped (I left peel on)
    3 cloves garlic, minced
    1 cup peeled & chopped roasted MILD Hatch chile (original recipe calls for 2 cups; however, I'm a wimp)
    1 15 ounce can Fire Roasted tomatoes, diced
    (I used the Fire Roasted with Garlic)
    2 ears fresh corn - cut raw kernels off cob & add to stew.
    Beef broth to cover - 3-4 cups.
    Spices: 1 tsp. cumin (I used 1 1/2)
    1 tsp. coriander (I omitted; didn't have)
    sea salt, black pepper to taste

Directions

Brown ground beef; drain. Place in large crock pot. Add chopped vegetables, canned tomatoes, and seasoning to taste. Stir. Set crock pot for HIGH for about 4 hours, or LOW for about 7-8 hours.

Serving Size: Makes about 5 servings
