Ingredients

1/4 cup rolled oats
1 scoop MRM vanilla protein powder
1/4 tsp Hain Featherweight baking powder
1/4 tsp xanthan gum (optional)
1 tsp cinnamon
1/4 tsp pumpkin pie spice
20 drops liquid stevia
1 tsp vanilla extract
2 tbsp pure pumpkin
2 egg whites
Directions
Grind oats into flour.
Mix oats together with all dry ingredients.
Whisk all wet ingredients together, then combine with dry ingrfedients.
Spray a small pan with non-stick spray and heat over medium heat.
Pour batter in pan in 1/4 cup servings.
Cook 2 minutes per side.
Serves 1: Makes 3-4 small pancakes (1/4 cup each)
Waffles: pour batter into waffle maker and cook according to your machine.
Muffins: pour batter in muffin tins sprayed with non-stick spray and bake at 375 for 15-20 minutes.
