Ingredients

    6 Cups cubed butternut squash
    1 small onion chopped
    3 cups chicken stock (I used water and Better Than Bullion Chicken Base).
    I medium apple, peeled and chopped
    1 TBS curry powder (I used a mix of sweet and hot)
    1/2 Cup coconut milk
    S&P

Tips

Great with a spoon of yogurt and some fresh cilantro.


Directions

The only thing that takes any time is chopping up that squash. If you buy the pre-cut, bagged stuff, you can make this in about 10 minutes.

Toss everything in crockpot. You can do it on low for 6-8 hours, or on high in about 2-3. Once it's all mushy, take a hand blender and puree it right in the slow cooker. If you do not have a hand blender you can ladle it into a regualr blender or food processor, but be careful; it's hot!
