Introduction

pork/hominy stew with some spice! pork/hominy stew with some spice!
Number of Servings: 8

Ingredients

    2tbsp Olive oil
    2 cloves garlic, minced
    1 medium onion, chopped
    3 stalks celery, chopped
    3/4 C chopped carrots
    2 lbs pork loin roast precooked and cubed
    1 29oz can hominy, rinsed
    2 4oz cans green chilies
    2 tbsp ground cumin
    32 oz Chicken broth
    2 tbsp chipotle in adobe sauce, chopped
    1 6oz container plain, non-fat greek yogurt

Tips

May need salt, but I don't like to salt until I eat it.


Directions

sweat garlic and onions in olive oil for 5-8minutes
add celery and carrots for 5 minutes
Add pork and cumin, toss to combine.
Add chilies, hominy, chipotle and broth
Bring to a boil, then reduce to simmer and cover for 30 minutes. Turn off heat and let sit up to 2 hours
Before serving, bring to medium temp, stir in yogurt.
Serve with chopped cilantro and shredded cheese on top (optional)
