Introduction

Ingredients

    1 Red Onion
    1 Bell Pepper, Green
    1 Bell Pepper, Red
    1 Package of Sliced Mushrooms
    1 Summer Squash
    2 T Vegetable Oil
    2 T butter
    Salt to Taste

Tips

We just eat this with plain rice (not included in the calories), for a meatless meal. I really just use whatever veggies are on hand - or I get the pre-cut ones at the store so it is even quicker. You really can't mess it up.


Directions

-In a nonstick skillet, heat oil over medium heat
-Rough chop onion - add to pan - let cook 1-2 minutes
-Add mushrooms to pan - cook 5 minutes
-Cut the rest of the veggies - add to pan
-Cook all veggies for 15ish minutes, or until tender/done to your liking, stirring occasionally so nothing burns
-Add butter the last 2 minutes - stir
-Enjoy
