Introduction

Bear Creek Soups are flavorful and convenient, but 960mg of sodium is enough to bring on a heart attack. I used only part of the package and other ingredients to dilute the sodium. Ingredients

    Olive Oil, 1 tbsp
    Leeks, .5 cup
    Celery, raw, .75 cup, diced
    Broccoli, fresh, .5 cup, chopped
    Potato, raw, 1 medium (2-1/4" to 3-1/4" dia.)
    Carrots, raw, .5 cup, grated
    Onions, raw, .5 cup, chopped
    Flour, white, 2 Tbsp.
    Chicken stock, 2 cup
    Homemade No Sodium Vegetable Stock, 2 cup
    Water, tap, 4 cup (8 fl oz)
    Milk, nonfat (skim milk), 1 cup
    Bear Creek Cheddar Broccoli Soup Mix, 0.75 cup

Tips

I used vegetables and stock that I had on hand. This is obviously modifiable.


Directions

Heat olive oil in a large sauce pan. Add leeks, onions, celery, broccoli, potato, and carrots. Cook until crisp-tender. Stir in 2 Tbsp. flour. Add chicken stock, vegetable stock, water and milk. Bring to a boil. Add soup mix and simmer for 10 minutes or until vegetables are done.
