    Bratwurst, 8 link (4 per 12 oz package) (remove)
    Garlic, 2 clove (remove)
    Shallots, 2 tbsp chopped (remove)
    Egg, fresh, 2 large (remove)
    Bread crumbs, dry, grated, plain, .75 cup (remove)
    Red Ripe Tomatoes, 2 large whole (3" dia) (remove)
    *Peppers, sweet, red, fresh, 1 large (2-1/4 per lb, approx 3-3/4" (remove)
    Yellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia) (remove)
    Zucchini, baby, 4 medium (remove)

    Mix together first five ingredients, taking the bratwurst out of the casing first. Chop garlic and shallots. Add herbes of provence to taste + salt and pepper.

    Hollow out all of the vegetables and get them ready to stuff. Cut the zucchini in half lengthwise before hollowing out. Stuff them with the sausage mixture.

    Bake at 375 for one hour. Cut the tomatoes and peppers in half before serving. Each half is one serving. Serve with rice. Bon appétit!
