Ingredients

    Red Pepper diced
    Onions (1) medium diced
    Garlic, 2 cloves crushed
    Olive Oil, 2 tbsp
    La Victoria Enchilada Sauce, 2 cup
    Diced Green Chilies 1 small can
    Roasting Chicken, light meat, 2 cup, chopped or diced
    Cheddar Cheese, 4 oz shredded
    Sour Cream, 1 cup

    Chopped Romaine Lettuce
    Chopped Tomato
    Chopped Green Onions
    Sliced Black Olives

Directions

Cook onion in hot olive oil for 3-5 minutes. Add garlic and red peppers. Cook approx. 5 minutes. Add enchilada sauces and green chilies with spices. Turn off heat and add sour cream and shredded cheese. Add chicken. Gently heat. Serve over shredded lettuce. Garnish with chopped tomato, green onion, olives and additional sour cream. Count extra carbs for garnish and lettuce.
