Introduction

I took my favorite Pumpkin Chocolate Chip Bread and made it healthier by substituting half the eggs with egg beaters, half the oil with applesauce, and half the sugar with stevia/sugar baking blend. It turned out great.I'll probably play with it some more to see if I like it with full substitutions. Ingredients

    3 1/2 cup flour
    1 T cinnamon
    1 T nutmeg
    1 tsp ginger
    2 tsp baking soda
    1 1/2 tsp salt
    1 cup sugar
    1 cup stevia/sugar baking blend
    15 oz. canned pumpkin
    1/2 cup canola oil
    1/2 cup applesauce
    2/3 cup water
    1 tsp vanilla extract
    2 large eggs
    1/2 cup egg substitute
    1 cup semi-sweet chocolate chips

Tips

Nutritional information is calculated using two large loaf pans, with each pan yielding 12 slices.


Directions

Preheat oven to 350 degrees F.

Mix wet ingredients. In a separate bowl, mix all dry ingredients, except chips. Gradually add dry ingredients to wet ingredients. Mix well. Stir in chocolate chips.

Grease 2 large or 3 medium loaf pans. Divide batter between pans.

Bake 60 minutes or until done.

Serving Size: If using 2 large loaf pans, makes 24 slices.
