Introduction

Number of Servings: 12

Ingredients

    1/3 cup Canola Oil
    1/4 cup Rice Vinegar
    2 tbsp Splenda
    1/2 tsp Ground Black Pepper
    16 oz pkg Cole Slaw Mix
    2 tbsp Sesame Seeds
    1/2 cup Almonds, slivered or sliced
    2 Scallions (large: 5"+ long)
    1 Ramen Noodles Seasoning Packet
    Ramen Noodles

Directions

Combine oil, vinegar, Splenda, salt, pepper, and seasoning packet in large bowl. Add the cole slaw mix, sesame seeds, almonds, and scallions. Toss lightly to mix. Cover and let sit 10 minutes.

When you serve, add the noodles. Otherwise, they get soft and I like the extra crunch they provide.

Makes approx. 6 cups (12 servings)

    My husband doesn't like mayo. I had already made some sesame-ginger dressing, so I tried it on this salad. Excellent.. - 7/28/19

    This is also the only version of "slaw" I will eat, too! My variations: I use chopped pecans instead of almonds, sunflower nuts for sesame, cider vinegar (will try the rice though!) Also- instead of sugar or splenda, I've started using Agave Nectar- HEAVENLY! (Find it in the baking sec. @ grocery!) - 5/28/09

    Very Good
    Great! Always looking for a non-mayo based version of salad favorites. An idea for a ramen substitute might be lightly cooked spaghetti squash. Maybe I'll try that next time and report back!
