Introduction

Even my kids think these muffins are addictive! Even my kids think these muffins are addictive!
Number of Servings: 12

Ingredients

    1/4 c honey
    1/4 c coconut oil
    4 eggs
    3 medium ripe bananas, mashed
    1/2 c coconut flour
    2 tsp baking powder
    1/2 tsp salt
    1 c frozen or fresh blueberries

Tips

Add 1 tbls vanilla for extra flavor. This originally came from the Everything Coconut Diet Cookbook by Anji Sandige


Directions

Preheat oven 350*. Mix dry ingredients. Blend wet ingriedients abd bananas. Incorporate dry into wet ingredients. Mix in blueberries and spoon into oiled or papered muffin pan. Bake 25 min or until golden.
