Introduction

Ingredients

    1 lb venison (any cut), cut into bite size pieces
    1 T olive oil
    1 T flour
    2-28 oz cans crushed tomatoes (w/o added oil)
    2 bell peppers, diced (add jalapeno to taste)
    1 large white onion, diced
    2-15 oz cans dark red kidney beans, with liquid
    2 T chili powder
    1 t ground thyme
    1 whole bay leaf
    2 t ground black pepper
    1 t ground cumin

Directions

Heat the olive oil in a skillet. Dust the meat with flour, and brown in the olive oil on all sides. Add the meat and all the other ingredients to the crock pot and stir to combine. Cook on high for 4 hours, or longer.

Serving Size: makes 10 1-cup servings
