Ingredients

1 2.6 oz StarKist Low Sodium Chuck Light Tuna
1 stick of Sargento Natural Reduced Fat Colby-Jack Cheese Stick
1/8 cup chopped onion
1/8 tsp dried dill weed
1/4 tsp dried parsley
1/4 tsp lemon juice
1 tbsp Hellmann's Low Fat Mayo
1 tsp French's Spicy Brown Mustard
salt and pepper to taste
1 medium to large tomato
You'll need a standard muffin tin.
Directions
Preheat oven or toaster oven to 350 degrees.
Cut just the very top off your tomato and discard. With a spoon scoop out the insides of the tomato making sure not to damage the tomato "shell" and discard.
Chop up the cheese stick, reserve 1/4 of the cheese for topping the tomato.
Mix the remaining cheese and all other ingredients, except the tomato, in a small bowl.
Carefully stuff and press the mixture in to the tomato. Top with reserved cheese.
Place the stuffed tomato into a muffin tin well so that the tomato does not tip over while cooking. It's okay, if the tomato does not fit all the way inside the muffin tin, as long as the tomato is supported on the bottom so it does not tip over while baking.
Bake 20 - 25 minutes or until heated through and cheese is melted.
