a delicious smooth soup that can be "clean" for some and dressed up for others with toppings, such as sour cream, bacon bits, shredded cheese... etc. Yummmm! a delicious smooth soup that can be "clean" for some and dressed up for others with toppings, such as sour cream, bacon bits, shredded cheese... etc. Yummmm!

Ingredients

    8 medium potatoes, cut into small pieces
    1 large onion
    7 cups low-sodium chicken broth/stock
    2 cloves garlic minced
    1 tsp. poultry seasoning
    1 tsp. basil
    1 tbsp. olive oil

Directions

saute the onions in the olive oil so they are soft and translucent.

peel and dice up the potatoes and toss them into the pot with the onions and add the broth and seasonings.

bring to a rolling boil and then reduce heat and allow to simmer, stirring frequently, til the potatoes are easily mashed up with a potato masher.

mash a bit and then take portions and blend until smooth, keeping some chunky according to personal preference, put it all together and serve!

Serving Size: makes 8 hearty servings 1 1/2 to 2 cups
