Ingredients

    barley, brown rice, lentils, kale, hot red peppers, margarine, 1/2 onion and 3 stalks of celery, chopped tomatoes in tomato juice, and "better than bouillon" organic vegetable base.

Tips

If low on water, add some. Add some salt to taste if desired. This recipe is easily modified to include more vegetables. Kale can be switched out for mustard greens or collard greens - or all the above. Tasting is a requirement for a great finish.


Directions

Over medium heat, in a large pot, sautee celery and onion in butter until translucent. Add water, hot peppers, vegetable base, kale, and chopped tomatoes with tomato juice . Bring to a boil, and then add barley, lentil and rice. Turn heat to low. Cook until grains are soft. Add salt to taste.

Serving Size: Makes 6 large bowls of soup
