Ingredients

    2 tsp olive oil
    3/4 cup chopped spanish onion
    1/2 cup diced celery
    450 grams ground chicken
    2 cloves garlic, minced
    1 28oz can diced tomatoes, undrained
    3 cups of low sodium Vegetable Cocktail
    1 cup each chopped carrots, zucchini and cabbage
    1 can red kidney beans, drained and rinsed
    1/4 cup tubetti pasta
    3 tbsp parsley
    1 bay leaf
    2 tsp dried basil
    1 tsp oregano
    1/2 tsp each thyme and black pepper

Directions

Heat Olive Oil in large pot over medium heat. Add onions, celery and garlic. Add chicken, brown then drain. Return to pot and add remaining ingredients. Bring to a boil, then reduce heat to medium low and simmer partially uncovered for 30 minutes.

Serving Size: Makes 20 1/2 cup servings.
